Matcha Oatmeal Recipe

Matcha oatmeal could earn a well-deserved place in your regular diet — it's filling and full of vitamins, minerals and phytochemicals. This hearty matcha oatmeal recipe requires you to soak oatmeal prior to preparation, but it will also reward you with extra health benefits. Soaking oatmeal increases the digestibility of oats. What's more, soaking oatmeal allows enzymes to neutralize phytic acid. Phytic acid, which is present in large amounts in unsoaked oats, is known to inhibit the proper absorption of certain health promoting minerals, including zinc and iron. To maximize the phytic acid neutralizing effects of matcha oatmeal, this recipe will instruct you to add a little bit lemon juice or another acidic medium to the water used for soaking oatmeal.


Ingredients

  • 1 cup rolled oats
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 cup water, plus additional water for soaking etc
  • 1-2 teaspoons matcha powder (or other green tea powder)
  • Pinch of salt
    Sliced fruit (e.g. strawberries, bananas, kiwifruit)

Directions

  • Soak rolled oats overnight. Add 1 tablespoon of lemon juice or apple cider vinegar to the water to improve the phytic acid neutralizing effects of your matcha oatmeal.
  • In the morning, pour off the soaking water and rinse the oats. Draining and rinsing will get rid of the phytic acid that has leached into the soaking water.
  • Prepare matcha paste by mixing 1-2 teaspoons of matcha powder with a little bit of water. Set aside.
  • Add 1 cup of water to a pot and bring to a boil over medium-high heat, then turn down the heat and mix in the matcha paste.
  • Add the rolled oats and a pinch of salt. Continue to simmer, stirring frequently, until your matcha oatmeal thickens.
  • Serve with sliced fruit such as bananas and strawberries.
