Bruschetta with Tomatoes and Arugula

Serves 4


  • 8 thick slices whole wheat baguette
  • 1 garlic clove, minced
  • 2 tbsp extra virgin olive oil
  • 4 ripe tomatoes, diced
  • 1/2 cup arugula, rinsed and shredded


  • Preheat oven to 450 degrees F.
  • While oven is heating, combine tomatoes, minced garlic, 1 tablespoon olive oil, and arugula in a bowl.
  • Toast both sides of baguette slices in top rack in preheated oven. Drizzle rest of olive oil on each slice and cover with bruschetta. Serve immediately.
